{quick three..} child friendly dinners..



Quite simply.. I'm sooo over cooking fantastic meals, to have my kids pick out what they want and leave 90% on their plate, to then dash to the fridge for a yoghurt. So from this day forward, I pledge to make cool food for them that they will eat and leave the fancy pants dinners for us big kids. When, they're ready, they can be big kids too.

So in saying that, I need to find kid friendly dinner and lunch options that are both easy for me to make, healthy and will be eaten by them. I don't have an issue with getting fruit into them.. its the veggies that let me down. With a bit of searching around, I've came up with my first three that I will try out on them. May the force be with me!!

{1} kid style sushi.. there are lots of variations you can have here.. and with brown bread and good fillings it might just work..

{2} sneaky muffins.. I once had a theory.. that if you put it in a muffin they will eat it. So out comes the blender and its all going in a muffin. Veggie muffins here we come.

{3} sneaky meatballs.. another food that is not rejected so in go more veggies than normal..

{recipe} cheesy tortilla triangles

Heading into the weekend I know I am going to get bombarded with requests for snacks. Without a doubt the request will come in the form of "mumma i'm huuuuuungry" whilst opening the fridge, pantry and grabbing at anything that first pops into sight.. might I add here that the blinkers are always on and there seems to be a spotlight on either yoghurt, cheese or nutella. Not all bad choices, but to increase the time frame between these requests, I feel I need to fill those tummies a little more. So I try to make something that will sustain them for at least half an hour, and in hopes that it might just be an hour between the next attack of the fridge. 

Now for the tricky part.. whatever I make needs to be almost instantaneous, so I have a little list of super quick recipes for filling snacks for the kiddos.. Here is one of my favourites.

{cheesy tortilla triangles}


ingredients
{1} 2 tortillas
{2} pizza sauce
{3} diced bacon
{4} grated cheese
{5} oil for cooking


directions
{1} oil frying pan (i like the spray oil)
{2} put one tortilla on the frying pan
{3} drizzle with pizza sauce + sprinkle with bacon + cheese
{4} cover with another tortilla
{5} fry till tortilla is starting to brown and cheese starts melting
{6} flip and fry till the other tortilla is golden
{7} cut into triangles and serve.. remembering to tell the little monkeys that its hot.. 


This is a seriously easy recipe and can be adapted to include tuna, mushrooms and any other pizza toppings your kiddos like. Mine are in the 'plain food' phase so the simpler the better.

thanksgiving part one..

First and foremost... Happy Thanksgiving!!

Being an Australian with a Polish heritage, I'm probably the last one that should be celebrating this day, but I do each and every year since meeting Mr Right. I imported this little gem to Australia almost a decade ago after living with him in the states for a little while. I got to experience a real thanksgiving only once unfortunately but fell in love with the whole concept and tradition and reason behind it right there and then. 

We spent the day with the big boys family and everyone bought a dish along to share.. I got to eat food's I never knew existed.. such as 'yams' (aka sweet potato) the American way with melted marshmallows on top.. yea.. you heard me right. This was sooo not the highlight, I did try to imitate this dish the year after in Australia but that was the first and last time.. sorry.. this one just does not work for me. One dish that I did fall in lurve with was the good old pumpkin pie.. oh my, oh my.. did I fall in LUUURRRVE!! 

Over the years I've mastered this little dish from getting the spices perfectly balanced, using just the perfect amount of sugar and everything just perfect. I even do the pastry shell myself from scratch... I could so justify putting on a kilo just to be able to indulge in this amazing creature of a dessert each year. 

Sadly.. oh so sadly.. our oven has shat itself the other week and this year there is not going to be the bestest dessert ever to hit this planet made by me.. but there just can't be a thanksgiving without pumpkin pie.. it's just not right..

Thankfully, we always defer thanksgiving to the following weekend as we don't get the day off here.. and what's a thanksgiving without the people that make you smile.. So this year I am attempting what could end up as a shameful misinterpretation of the amazing thing that is the pumpkin pie.. a non cooked version.. So today I played around and tested the available pre-made goodies around.. using banana at this stage.. so here goes.. 

kasiabear's 
simple banana caramel volauvents.. 

ingredients:
ready made volauvent shells
ready made whipped cream
two bananas
can of caramel top'n'fill




directions:
mush banana
stir through caramel top'n'fill
fill the volauvents
chill for about an hour or so.. more if you can..


top with ready made whipped cream and devour..


and oh my.. we had these little devils tonight and they are sooo ridiculously bad in a good way.. 
have fun with them!!

sorry emma.. i just had to join in with this one.. i know its not dinner.. but if you use a big volauvent then you probably shouldn't eat dinner..
